Hippocrates was a very intelligent and astute man. He knew many thousands of years ago how the digestive system worked. In 400 B.C., he said “Death sits in the bowels” and “Bad digestion is the root of all evil.” The Romans knew a thing or two about healthy foods as well. They ate many fermented foods and today many cultures still eat some form of fermented foods, such as Korean Kimchi, Middle East; Kefir, Europeans; sauerkraut and fermented fish. North American cuisine used to contain fermented pickles and sauerkraut, but this is no longer popular.
