Light, refreshing and nutritious, this will be your favorite summer beverage. It’s packed with anti-inflammatory properties and electrolytes too.
One day, we went out for lunch and I ordered a Coconut Water Lemonade at a restaurant we went to on the beach. I am not a huge fan of coconut but it sounded so refreshing (and healthy) so I decided to give it a try.
It was amazing! I knew I wanted to recreate it when I got back to NJ and share it with you guys. I added some ginger to mine (ginger is an amazing anti-inflammatory) and of course, chopped mint. This will be my favorite drink this summer, I just know it.
Add whatever sweetener you’d like, raw honey, stevia or coconut nectar would work well.

- 2 liters coconut water
- 1 cup lemon juice
- ⅓ cup grated ginger
- ½ cup coconut nectar
- 1 cup ice
- lemon slices
- mint leaves
