I  absolutely love red velvet cake. It is one of my favorites. I saw the photo for this cake on MindBodyGreen and thought yum, I have to share this.  I am sure you’ll love this red velvet cake with a twist, and you won’t feel so guilty eating it because it includes beets. Beets are very healthy for you. And, it’s gluten-free too. You’ll find the recipe below. Enjoy!

Serves 12
Ingredients

  • 1/3 cup raw cacao powder
  • 1/2 cup coconut flour
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla extract
  • pinch of sea salt
  • 8 eggs, whisked
  • 1/2 cup rice malt syrup
  • 1/2 cup coconut oil, melted
  • 2 cups grated beets
  • 1 cup cream cheese frosting (16oz cream cheese mixed with 1/4 cup of maple syrup), to serve
