I absolutely love red velvet cake. It is one of my favorites. I saw the photo for this cake on MindBodyGreen and thought yum, I have to share this. I am sure you’ll love this red velvet cake with a twist, and you won’t feel so guilty eating it because it includes beets. Beets are very healthy for you. And, it’s gluten-free too. Ingredients
- 1/3 cup raw cacao powder
- 1/2 cup coconut flour
- 2 teaspoons baking powder
- 2 teaspoons vanilla extract
- pinch of sea salt
- 8 eggs, whisked
- 1/2 cup rice malt syrup
- 1/2 cup coconut oil, melted
- 2 cups grated beets
- 1 cup cream cheese frosting (16oz cream cheese mixed with 1/4 cup of maple syrup), to serve
